بررسی کیفیت گوجه فرنگی رشد کرده در خاک غنی شده با سرباره آهن و تاثیر آن بر سلامت انسان

چکیده

ازمینه و هدف: آلودگی خاک‌ها به فلزات سنگین در مناطق صنعتی کشور می‌تواند باعث کاهش قابلیت دسترسی آهن در زنجیره غذایی انسان شود.‌ این تحقیق با هدف بررسی بهبود کیفیت گوجه فرنگی رشد کرده در خاک غنی شده با سرباره آهن و تاثیر آن بر سلامت صورت پذیرفت.
مواد و روش‌ها: این پژوهش در سال 1395 در یک گلخانه تحقیقاتی در شهرستان اراک با 72 گلدان شامل کاربرد ‌0 ، 15 و 30 تن در هکتار کود گاوی غنی شده با 0 و 10 درصد وزنی آهن خالص از ترکیب سرباره آهن در یک خاک آلوده به ، 600، 800 و1000 میلی گرم سرب در کیلوگرم خاک اجرا شد. در پایان دوره آزمایش، غلظت آهن میوه گیاه گوجه فرنگی اندازه‌گیری شد و بر اساس آن میزان جذب روزانه آهن برای گروه سنی 4 تا 50 سال محاسبه شد.
یافته‌ها: مصرف 80 گرم گیاه گوجه فرنگی کاشته شده در خاک تیمار شده با 30 تن در هکتار کود گاوی غنی شده با سرباره آهن باعث تامین 4/18درصد میزان روزانه آهن در گروه سنی کودکان بین 4 تا 8 سال شده است. با افزایش آلودگی خاک به 1000 میلی‌گرم سرب، تنها 1/12 درصد آهن در این گروه سنی تامین می شود.
نتیجه‌گیری: نتایج کلی این تحقیق حاکی از آن است که کاربرد کود گاوی غنی شده با سرباره آهن نقش موثری در افزایش تامین آهن مورد نیاز بدن انسان ناشی از مصرف گوجه فرنگی داشته است، هر چند که کاشت گیاه گوجه فرنگی در خاک آلوده به سرب باعث کاهش غلظت آهن میوه گیاه و در نتیجه باعث کاهش تامین مقدار آهن مورد نیاز بدن انسان شده است.

Background & Objectives: Soil pollution with heavy metals can decrease Fe availability in human food chain in industrial regions. This research was done to investigation the quality of tomato grown in a soil treated with iron slag and its effect on human health.
Materials and Methods: This research was done in 2016 in a greenhouse experiment in Arak province with 72 pots including: applying 0, 15 and 30 t ha-1 cow manure enriched with 0 and 10% (W/W) iron sludge in a Pb polluted soil (0, 600, 800 and 1000 mg Pb kg-1 soil). At the end of experiment, fruit Fe concentration was measured and Fe daily intake for 4 to 50 years group was calculated.
Results: Consumption of 80 g tomato which cultivated in soil treated with 30 t ha-1 enriched cow manure with iron slag can supply 18.4% Fe daily requirement for the children in the range 4 to 8 years. With increasing the Pb soil pollution up to 1000 mg/kg soil, only 12.1% Fe requirement was supplied in this age group.
Conclusion: The results of this experiment showed that applying enriched cow manure with iron slag has affect on increasing Fe requirement from tomato consumption. However, tomato cultivation in Pb polluted soil can decrease fruit Fe concentration and thereby, decrease the human Fe intake.
